Vegetable Soup
Ingredients: 1/3 cup oil
2 medium onions, chopped 5-6 stalks celery cut in slices 1 small package carrots, cut in circles 2 large baking potatoes, cubed
1-2 green peppers cut in large dice, or short strips 1 small bag fresh green beans, cut in half or thirds 2 bay leaves
Salt, pepper and cayenne, to taste 2/3 tbsp. Kondari (Georgian Spice)
5-6 cloves garlic, minced 1/2 tsp. ground coriander 1 can peas, drained 1 (15 oz.) can tomato sauce Water OR Vegetable stock (for desired consistency) 1/4 bunch fresh parsley AND fresh cilantro
Instructions: In large soup kettle, sauté in oil over medium heat, beginning with onions and adding the celery, carrots and potatoes as each cooks a bit. Add green peppers, green beans and bay leaves and continue to sauté and stir. After beans soften a bit add salt, pepper and cayenne to taste, as well as the Kondari, garlic, and coriander and mix well. Add and stir in: 1 can peas, drained; 1(15oz) can tomato sauce and water or vegetable stock to desired consistency. Bring to a boil, turn to simmer and check seasonings. Stir in ¼ bunch of parsley and cilantro. Turn off heat and serve.
Note: Hearty and filling with a garden full of flavors.
