Tomato-Rice Soup – Greece Paul N. Chryssikos – Paul loved to cook and would prepare a meal for his colleagues at the annual Concord Faculty picnic. Ingredients: 4 tbsps. butter 1/2 cup chopped onion
1/2 cup chopped green pepper 1/2 cup chopped red pepper 5 medium ripe tomatoes, peeled, seeded and chopped 1/2 cup uncooked rice 4 cups chicken stock OR if fasting vegetable stock or water 3/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. summer savory 1/4 cup fresh parsley, finely chopped
Optional, for serving: Plain yogurt chopped green onions
Instructions: In a large saucepan melt the butter, add the onion and peppers. Cook over medium heat 5 minutes. Add tomatoes and rice; continue cooking for another 5 minutes. Add the chicken stock and seasonings. Bring to a boil, then simmer over medium heat 20 minutes or until rice is tender.
Garnish with yogurt and green onions.
