Fish Stew
Ingredients: 1/3 cup oil
1 medium onion, chopped 3 large garlic cloves, minced 2/3 cup fresh parsley, chopped 1 large can crushed tomatoes with juice 2 tsps. tomato paste (optional) 8 to 12 oz. clam juice 1/2 cup dry white white-Sauvignon Blanc 1-1/2 lb. fish, firm white fish; such as halibut or cod cut into 2-inch pieces 1 box frozen OR 1 can drained
Mixed vegetables 1/2 tsp. oregano 1/4 tsp. thyme Add hot sauce of choice, to taste Fresh pepper and kosher salt, to taste
Instructions: Heat oil in a large thick-bottomed stock pot over medium-high heat. Add onion and sauté until translucent, add the garlic and cook a minute more. Add parsley and stir, add tomato and tomato paste, and cook for about 15 minutes on medium heat. Add clam juice, dry white wine, and fish. Bring to a simmer and simmer until the fish is cooked through. This should take about 5 minutes. Add all seasonings at this point.
Savory stew needs a savory bread – of your choice!
Note: There are no hard and fast rules with this stew. If you want more substance in your stew, add scallops, ½ pound of shrimp, or clams to the stew.
