Buttermilk Biscuits

Ingredients: 2 cups all-purpose flour 1/4 cup (for dessert biscuits only) sugar 1 tbsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 cup buttermilk 3 tbsps. oil 2 tbsps. (for dessert biscuits only) vanilla extract

Instructions: Preheat the oven to 425 degrees. Lightly grease two 13 by 18-inch baking sheets. Place flour, (sugar), baking powder, baking soda and salt in a medium sized mixing bowl and stir to combine. Add the buttermilk, oil and (vanilla) and mix with a fork until just blended. Do not overmix or the biscuits will be tough. Ass and additional tablespoon of buttermilk if the dough seems to dry, should be fairly sticky. Drop the dough by heaping tablespoons 1-1/2-inches apart, onto the baking sheets. Bake for 10-12 minutes., until light golden brown. Remove from the oven and serve immediately. Note: To make even more special top with shredded cheese or butter with fresh herbs and parmesan. These are great for strawberry shortcake-in the sweet version. Or rather than make a traditional crust on chicken pot-pie, why not top it with some savory buttermilk biscuits?!
