Kulich – Slavic Orthodox Easter Bread

Ingredients: 2 cups warm milk 2-1/2 cups plus 3-1/2 cups flour 1 package dry yeast 1-1/2 sticks unsalted butter, softened 2 cups of sugar divided in half 3 eggs 1 tsp. salt 1 tsp. vanilla 1/3 package golden raisins

Instructions: Dissolve yeast in warm milk, add the 2-1/2 cups flour, and mix by hand. Let rise 45-60 minutes. Beat together the butter and 1 cup sugar until soft. Beat together 3 eggs and 1 cup of sugar. Add all of the above mixtures and remaining ingredients to the mixture and mix on a low speed in mixer for about 15-20 minutes. Let rise 2 hours. Put carefully in forms. Coffee cans or juice cans, etc., which have been lined with parchment paper and let rise about 1 hour. Bake in 325 degree oven for 40-55 minutes or until golden brown. (Not too dark). Let cool in forms for 10 minutes, then carefully remove and cool on sides turning occasionally to prevent flat sides. Wrap when totally cool and freeze. Makes: 2 loaves.
