Grandma Semonco’s Yum-Yums Yum-Yum’s are cupcakes that Grandma Semonco made often, and they were loved by everyone!
Ingredients: This is a double recipe. 1 cup Crisco 1 box light brown sugar 4 eggs 2 teas. cinnamon 2 teas. ground cloves 1/2 teas. Nutmeg – can use a little more nutmeg if desired
2 cups buttermilk 2 teas. baking soda 2 cups raisins – scalded in hot water 3 cups flour – or enough to make a thin paste
Heat oven to 375 degrees and line cupcake pans with liners. Cream sugar with Crisco and add beaten eggs –– Beat until creamy. Mix together the flour, cinnamon, cloves and nutmeg . Put soda into buttermilk. Add part of the buttermilk mixture and part of the flour mixture alternately to the creamed Crisco, sugar and eggs. Add the raisins last. Mix all together. Pour into cupcake liners in a cupcake pan. Bake for 30 minutes at 375 degrees. * You can substitute 2 sticks of softened butter for 1 cup of Crisco.

Banana Nut Bread
Instructions: Sift dry ingredients into bowl; flour, baking soda, salt and caster sugar. Add the nuts. Add the remaining ingredients to the dry mixture. Stir just until batter is nicely combined. Pour into a greased medium-sized loaf pan. Bake at 350 degrees for about an hour.
2 cups sifted flour 2 tsps. baking powder 1/2 tsp. baking soda 3/4 tsp. salt 1/2 cup caster sugar (or very fine sugar) 1 cup chopped walnuts Egg replacer, the equivalent to 1 egg
1/4 cup vegetable oil 1 cup mashed bananas 1 tbsp. lemon juice
