Savor the Flavor
Pico de Gallo
Ingredients: 1/2 cup Onion, finely diced
1/2 tsp. Salt
1 clove
1 jalapeño Seeded and diced 4 plum tomatoes Diced 1/2 cup Fresh cilantro, chopped
Garlic, minced Juice of 1 lime
Instructions: In a small bowl, put the onion, garlic, and line juice and stir to combine. Stir in the sauce and let rest for a few minutes to softened the onions and meld the flavors. Stir in the jalapeño pepper, tomatoes, and cilantro. Taste and add more salt if needed. Cover and refrigerate for 1-2 hours to let the flavors meld. Serve immediately, or store tightly covered in the refrigerator up to 3 days.
Guacamole
Ingredients: 4 ripe Avocados 1 medium Tomato
3 tbsps. Lime juice
1 tsp. Salt
1/2 cup Red onion, finely diced
1/2 tsp. Cayenne pepper
Instructions: In a medium bowl, mash the avocado with a fork until mostly smooth. Stir in the tomato, onion, lime juice, salt and cayenne pepper. Serve immediately. TIP: To store: Cover with plastic wrap and press the wrap directly onto the guacamole, pressing out any air bubbles. Another method is to cover the guacamole with about a 1/2-inch of water to prevent any air getting to it, when ready to enjoy just dump off the water, stir and enjoy.
Salsa Verde
Ingredients: 2 (28 oz.) cans Tomatillos, drained 2 cloves garlic
2 tbsps. Olive Oil 2 jalapeño peppers
Juice of 1 lime 1-1/2 tsp. Salt 2 cups Fresh cilantro, chopped
Instructions: In the bowl of a blender (or food processor), ad the tomatillos, garlic, olive oil, jalapeno peppers, lime juice, salt and fresh cilantro and process to a puree. Taste and adjust the seasoning if needed. Use immediately, or store in a tightly covered container for up to 5 days.
