Homemade Remoulade

Ingredients: 2-1/2 oz. Mayonnaise 2 Tbsps. Plain yogurt

1 tbsp. Capers

3 tbsp. Parsley, finely chopped A few drops of lemon juice

2 tbsps. Pickles, chopped

1 very small Onion, finely chopped Salt, to taste

Instructions: Blend the mayonnaise with the yogurt and mix the rest of the ingredients into the mayonnaise mixture.

Onion Marmalade

Ingredients: 2 tbsps. Chicken broth 4 scallions Yellow onions, thinly sliced 1/4 cup Balsamic vinegar

Instructions: In a large sauce pan over medium-high heat, warm the broth. Add the onion, cover and cook until translucent and very soft, about 45 minutes. Uncover, lower the heat and simmer for 1 hour, stirring periodically. Add the vinegar and cook until the onion is caramelized, about 1 hour longer. This is great served as a condiment or as an hors d’oeuvre, or atop pizza. It can add flavor to a number of dishes.

Bazhe

Ingredients: 1 cup Walnuts Red pepper powder, to taste 1 tsp. Zafran powder 1 tsp. Fenugreek powder 1 tsp. Salt 4 cloves Garlic 1 cup (used to make thicker or thinner) Boiled and Chilled water

Instructions: Place all the ingredients in blender or food processor and blend for 2-3 minutes or until the texture is smooth. Make sure all the walnuts and garlic cloves have been well mixed. Taste it and you can manage the thickness by adding more water (for a thinner sauce) or more walnuts (for a thicker sauce). Transfer sauce to a small bowl and serve. You may enjoy this sauce over chicken, fish, fried cauliflower or other vegetables.
