Spicy Peanut Sauce

2 tablespoons sesame oil 1-1/2 tablespoons minced fresh ginger 1-1/2 tablespoons minced garlic 1/4 cup scallions (white parts only) 1-1/2 cups chicken broth

1/3 cup chunk peanut butter 1 teaspoon Chinese chili paste 2 teaspoons hoisin sauce 2 teaspoons red wine vinegar

2 tablespoons soy sauce 2 tablespoons dry sherry 1 teaspoon potato starch dissolved in 1 tablespoon water

In a large skillet, heat the oil. Add the ginger, garlic, and scallion sauté for 2 minutes. Whisk in the chicken broth, peanut butter, chili paste, hoisin sauce, vinegar, say sauce and sherry. Bring the sauce to a boil, lower the heat and simmer for 10 minutes. Whisk in the dissolved potato starch stirring constantly until the sauce thickens slightly.

Garam Masala-Spice Blend

2 tablespoons coriander seeds 2 tablespoons cardamom seeds 1 cinnamon stick 1 tablespoon black peppercorns 1 tablespoon ground cumin 1 tablespoon whole cloves 1 whole nutmeg

In a dry skillet, separately roast all the ingredients except the nutmeg. You will know that the spices are roasted when they give off their aromas. When they do remove from the heat. Remove the husk from the cardamom seeds. Place the roasted spices in a spice grinder and finely grind. Grate the nutmeg over the mixture and store in an airtight container.

Chinese Five Spice

2 tablespoons peppercorns 2 tablespoons star anise 2 10-inch cinnamon sticks 2 tablespoons whole cloves 2 tablespoons fennel seeds

Place the spices in a spice or coffee grinder. Mix well and store in a small jar or pot.
