St. Nicholas Squares-A Holiday Treat Oh, so-o-o-o good!
Ingredients: 1-1/2 cups unsalted butter or margarine, softened
1 cup plus 2 tbsps. and 2 tsps. sugar 1-1/2 cups firmly packed brown sugar
3 tbsps. milk 3 cups flour
1-1/2 tsps. baking powder 1-1/2 tsp. ground cinnamon
1 tsp. ground nutmeg 1/2 tsp. ground cloves
1 (7oz.) package almond paste 1 large egg and 1 large egg white 1/2 cup sliced almonds
Instructions: Beat butter, 1 cup sugar, brown sugar, and milk in a large mixing bowl with an electric mixer at high speed for 4 minutes or until creamy. Combine flour, baking powder, cinnamon, nutmeg and cloves in a medium bowl, blend with a wire whisk. Stir flour mixture into butter mixture, mix well. Line two 8-inch square baking pans with aluminum foil. Divide dough into fourths. Pat one fourth of dough evenly into the bottom of each pan. Lift foil and crust from pan and set aside. Lightly grease the bottom of each pan and pat the remaining pieces of dough evenly into the bottom of each pan. Mix almond paste, egg and two tablespoons of sugar in the food processor until smooth; pour almond paste over cookie crust in each pan. Tun foil with shaped cookie crust over filling, peel off foil. Whisk egg white until frothy, brush over top crust. Sprinkle top crust with almonds and 2 teaspoons sugar. Bake at 350 degrees for 30 to 40 minutes or until golden brown. Allow to cool completely; cut into bars.
