St. Nicholas Honey-Spice Cookies Ingredients: 2 eggs 1/8 tsp. black pepper 1 cup sugar 1 tsp. baking soda 1 tsp. cinnamon 3 tbsps. water 1/2 tsp. ground cloves 1 cup honey 1/2 tsp. ginger 3 cups sifted flour Instructions: Cream eggs and sugar until very light. Add spices and the baking soda, till dissolved in the water and the honey. Mix well. Add flour and work into a dough. Knead for a few minutes. Using flour and a rolling pin, roll out to about a ¼ inch thick. Cut into hearts, circles, stars or any other desired shape. Bake on a lightly greased cookie sheet for about 10 minutes. Store in a light lidded container. If desired glaze with icing before serving. Chocolate is traditional, but vanilla is good too. Chocolate Glaze: In saucepan combine 3-4 oz (squares) semi-sweet chocolate and 1 stick of butter or margarine. Sprinkle with ½ tsp water and heat, stirring constantly until smooth and glossy. Use immediately. Place cookies on wax paper until the glaze has set.

St. Phanourious Cake

Ingredients 4 cups self-rising flour

Grated lemon peel 1/2 cup dark raisins 1/2 cup light raisins

1 tsp. cinnamon

1 cup vegetable oil

1 cup plus 2 tbsps. sugar 3/4 cup orange juice

1/2 cup walnuts, finely chopped

Icing sugar

1/2 cup water

Instructions: Combine flour and cinnamon. In a medium bowl beat oil, sugar, orange juice, water and lemon peel. Add raisins, nuts and flour mixture, beat well. Grease and flour a 12” round pan. Shake out excess flour from pan. Pour batter int pan and bake at 350 degrees for about 45 minutes.

When cooled dust with icing or confectioner sugar and cut into squares.

Cake tastes better if left for 24 hours.
