Paximadakia (Biscotti)
Ingredients: 1 sticks margarine OR butter, softened 1-1/2 cups sugar 3 eggs 4-1/2 to 4-3/4 cups all-purpose flour 1 tsp. baking powder 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 cup finely chopped walnuts
Variations: 1 tbsp. Brandy 1 tsp. vanilla extract 1/2 cup chopped roasted almonds, (instead of walnuts)
Instructions: Beat margarine or butter and sugar until fluffy. About 10 minutes. Add eggs one at a time. Then add flour, baking powder, salt and cinnamon. Add chopped walnuts. Don’t make the dough too stiff. Roll out 3 rolls-3 inches wide and the length of a cookie sheet. Score rolls 1/2 inch wide. Bake at 325 degrees, for about 30 minutes until golden. Cut biscotti where scored into pieces. Turn on side on cookie sheet to bake until golden turning once. For variations: For a different flavor, add one tablespoon brandy and one teaspoon vanilla, and use 1/2 cup chopped roasted almonds instead of walnuts.

Tuffies
Ingredients: 3/4 cup melted butter 2 eggs 1 cup flour 2 cups brown sugar 1 tsp. vanilla Pinch of salt 1 cup chopped pecans
Instructions: Mix all ingredients together. Pour in 8-inch square pan. Bake for 30 minutes at 350 Degrees. While warm, cut in 1- inch squares and roll in confectioners’ sugar. After 30 minutes of baking they may not look done, but they are supposed to be very “gooey”.
