Black and White Chili

Ingredients: 1 tbsp. olive oil

1 large onion, diced 1 tbsp. garlic, minced 2 lbs. ground turkey 1 (15 oz.) can diced tomatoes 1 (15 oz.) can black beans, rinsed and drained 1 (15 oz.) can Pinto, Northern, Cannellini beans, 1 of your choosing, rinsed and drained 1 can chipotle peppers in adobo sauce; the peppers add spice, adobo adds

smokiness and very little spice; good for flavor 1/2 chocolate bar or 3 tbsp Hershey’s syrup 1 tbsp. cumin 1 tbsp. chili powder

1 tsp. Parsley and Cilantro Any other spices, to taste Salt and pepper, to taste 1 (15 oz.) can. corn, drained

Instructions: Sauté together onion, and garlic, ground turkey and cook until browned. Meanwhile, rinse and drain the black beans and the “white” beans of your choosing. Put in crock pot on high heat, the finished meat garlic, and onions, the diced tomatoes, and beans. Add chipotle pepper(s) with some adobo sauce remember how many peppers you use, as they should be removed before serving—so no one gets an extra spicy surprise. Add chocolate, cumin, chili powder, parsley an cilantro and salt and pepper to taste (as well as any other spices). Stir well. Let the crock pot simmer for 1-2 hours. Before serving drain corn, and mix into the crock pot stirring through. Taste and adjust seasoning. Fish out chipotle peppers if you can find them. Serve and enjoy. Tasty over rice, polenta, cheesy mashed potatoes, cornbread or pasta. Top with your favorite chili toppings such as lime wedges, sour cream, shredded cheese, fresh parsley or cilantro. Can also be made fasting friendly by removing the ground meat and substituting more varieties of beans. I like to add kidney beans during the fast.
