Meanwhile, another kettle of meat had been boiling slowly most of the day. This
kettle was filled with mainly fat scraps and small bits of lean. The hogs’ tongues were
also in the pile, and Mom always put at least one liver in to help the flavor. Once tender,
the meat was ground, seasoned, and put into crocks for cooling and storage. This
