Spicy Tomato Sauce

Ingredients: 2 tbsps. olive oil 3 medium onions, chopped 4 cloves garlic, minced 2 tbsps. balsamic vinegar 3 (28-ounce) cans crushed tomatoes, with their juice

2 tsps. dried oregano 1 tsp. cayenne pepper 1 tsp. salt 2 tsps. black pepper, freshly ground

Instructions: In a large stockpot, heat the olive oil over medium-high heat. Add the onion, and cook for about 5 minutes, stirring frequently until, until soft. Add garlic and cook, stirring constantly for 1 minute. Stir in the balsamic vinegar and then the tomatoes, oregano, cayenne pepper, salt, and black pepper. Bring the mixture to a boil then reduce the heat to low and simmer, uncovered, stirring occasionally, for about 1 hour until the sauce is thickened. Let cool and then transfer to storage containers and refrigerate or freeze.

Skorthalia (Greek Garlic Sauce)

Ingredients: 2 med. potatoes, peeled and quartered 4 cloves garlic, chopped

1/2 c. water 1/2 tsp. salt 1/2 tsp. sugar 3 tsp. lemon juice 2 tsp. olive oil

Instructions: Boil the potatoes until soft. Drain and mash with a fork. Place garlic, water, salt, and sugar in a food processor and process until smooth and liquified. Add potatoes, lemon juice and olive oil. Continue to process until smooth. You can add more potatoes or less water if you want the sauce to be thicker. Let chill in the refrigerator. Serve with veggies, or over pasta ore with pita bread wedges. It is also great as a sauce over meat especially fish. NOTE: You can add as much garlic as you like. Just be sure everyone around you has a taste of the sauce. My great Grandfather loved to eat this and would say that after eating this he could have any seat he wanted at the movie’s!
