Romesco Sauce

Ingredients: 1 (8 oz.) jar roasted red bell peppers, drained well 1 large clove garlic 1/4 cup almonds 1 tbsp. white wine vinegar 1/2 tsp. salt 1/4 tsp. cayenne pepper Fresh lemon zest (optional)

Instructions: In the bowl of a food processor (or blender), add the bell peppers, garlic, almonds, vinegar, salt, and pepper and process to a smooth puree. This Spanish roasted red bell pepper sauce is thickened with ground almonds and given an acidic punch from vinegar. Traditionally served as a dipping sauce for grilled prawns, it is also fantastic on roasted or grilled fish or chicken or used as a dipping sauce for crudités.

Ingredients : C mayonnaise C ketchup (75% less sugar) C sugar (Stevia that measures cup for cup) 1 small, sweet onion tsp salt

tsp pepper 1 C olive oil

Instructions: In a blender, place mayo, ketchup, vinegar, sugar, onion, salt and pepper. Cover and process until smooth. While processing, gradually add oil in a steady stream. Let chill in refrigerator for about in 1 hour to let onion flavor mellow.

Makes about 40 tablespoons 61.8 calories per tablespoon
