NO-BAKE COCONUT GRANOLA BARS
Ingredients: Coconut oil, for the baking dish
1 cup chopped walnuts 1 cup chopped almonds 1 cup dried cranberried 1 cup old–fashioned rolled oats 3/4 cup unsweetened shredded coconut 1 tsp. ground cinnamon 1-1/4 cup honey 1 tsp. vanilla
Instructions: Lightly coat 9-by-13-inch baking dish with coconut oil. In a large bowl, stir together the walnuts, almonds cranberries, oats, coconut, and cinnamon. In a small saucepan, heat the honey and vanilla over medium-high heat for about 3 minutes, stirring frequently until it boils. Add the hot honey mixture to the walnut mixture and stir to mix well. Quickly transfer the mixture to the prepared baking dish. Cover with a piece of parchment paper and press down to pack it tightly into the baking dish. Transfer the baking dish to the freezer and freeze overnight. Cut into bars and serve chilled. Wrap the leftover bars individually and store them in the freezer, in an airtight container until ready to eat. Optional: Replace any other types of nuts or dried fruit you may prefer. Makes 12 bars.
