Breakfast Quiche

Ingredients: 2 9-inch unbaked pie shells 1 lb. hot sausage 1/4 cup onions, chopped 1-1/2 cups mayonnaise 4 eggs 1 cup milk 3 cups cheese, (1 cup mild and 2 cups sharp) Salt and pepper, to taste

Instructions: Preheat the oven to 400 degrees. Brown the sausage, drain and set aside. Mix together the onion, mayonnaise, eggs , milk , cheese and salt and pepper, to taste. Add the sausage to the mixture and pour into the pies pans. Bake for 25 minutes. NOTE: This is a basic quiche recipe that can be modified in many ways. You can use any type of meat you want—cooked/crumbled bacon, ham, hot Italian sausage, etc. Or, spinach is also good!

Homemade Cinnamon Granola

Ingredients: 5 cups old-fashioned rolled oats 1-1/2 cups unsweetened shredded coconut 1 cup almonds, sliced 1/4 cup coconut oil, melted 5 tbsps. maple syrup

2 tbsps. coconut sugar 1 tbsp. vanilla extract 1-1/2 tsp. ground cinnamon 1 tsp. salt

Instructions: Preheat the oven to 325 degrees. Line a large baking sheet with parchment paper. In a large mixing bowl add the oats, coconut, and almonds and stir together. In a medium bowl, stir together the coconut oil, maple syrup, coconut sugar, vanilla, cinnamon, and salt. Drizzle the coconut oil mixture over the oat mixture and coat evenly. Pour the mixture into the prepared baking sheet and spread into an even layer. Bake for 45 minutes until it begins to turn golden brown. Let the granola cool on the baking sheet for 1 hour. When cool, break into small pieces. This recipe makes a large amount of granola. Store the extra in an airtight container at room temperature for up to two weeks. You can also freeze the granola for up to three months. Makes about 8 cups, 16 (1/2 cup servings)
