Apple Cake with Quick Caramel Frosting
Ingredients: 2 cups sugar 1-1/2 cups oil 3 eggs
3 cups flour 1/2 tsp. salt 1 tsp. baking soda 2 tsps. vanilla 3 cups chopped apples 1 cup nuts
Instructions: Beat the sugar, oil, and eggs until smooth. Combine the remaining ingredients and bake in a Bundt pan at 325 degrees for one and a half hours. Once the cake is cool to touch, ice the cake with the caramel icing below.
Quick Caramel Frosting Ingredients: 1/2 cup butter 1 cup firmly packed brown sugar 1/4 cup milk 2 cups sifted confectioner’s sugar
Instructions: Melt 1/2 cup butter in saucepan add 1 cup firmly packed brown sugar; cook over low heat 2 minutes stirring constantly add 1/4 cup milk, bring to boil. Remove from heat and cool, add about 2 cups of sifted confectioner’s sugar gradually beating well.

Cinnamon Pecans and Almonds (Sugar Free)
Ingredients: 2 tbsp unsalted butter ½ C pecan halves ½ C sliced Almonds ¼ C Stevia (measures cup for cup) ¼ tsp cinnamon
Instructions: Melt butter on medium heat and sauté for about 2 minutes until all is brown. Add all ingredients to the butter and cook for 2 minutes.
