Pumpkin Roll

Ingredients: 3 eggs 2/3 cup pumpkin 3/4 cup flour 1 tsp. cinnamon 1 tsp. ginger 1/2 tsp. nutmeg

1 cup sugar 1/2 tsp. salt

Instructions: Beat eggs at high speed for 5 minutes. Gradually add sugar. Mix in pumpkin. Stir dry ingredients together with other mixture. Spread on even greased cookie sheet bake at 375 degrees for 15 minutes. Lay cake on lint free towel, covered with confectioner’s sugar. Roll into a towel and let cool. Unroll and spread with filling, then roll back up, wrap with Reynolds Wrap. Refrigerate. Can be frozen for a later time.

Cream Cheese Icing Filling Ingredients: 1/4 cup margarine 1 (8oz.) package cream cheese 1 tsp. vanilla 1 cup confectioner’s sugar

Instruction s: Blend margarine and cream cheese together. Add sugar and mix well. Add vanilla, stir until blended. Icing is ready to spread on cake.

Crack Cake

Ingredients: 1 box yellow cake mix 1/4 cup brown sugar 1/4 cup white sugar 1 small box vanilla instant pudding 2 tsps. Cinnamon 4 eggs 3/4 cup water 1/2 cup white wine

Instructions: Mix all ingredients by hand or mixer. Grease and flour a Bundt pan and pour in batter. Bake for 1 hour in 350 degree preheated oven.
