Peanut Brittle Prep time Cook time Ready in Serves 10 min 8-11 min 1 hr. 8
ingredients 1 cup of sugar 1/2 cup of white corn syrup 1 cup of roasted salted peanuts 1 teaspoon of butter 1 teaspoon of vanilla extract 1 teaspoon of baking soda
directions 1. In a 1 and 1/2 quart casserole, stir together sugar and syrup and microwave on high for 4 min. 2. Stir in peanuts and microwave on high 3 to 5 minutes until light brown 3. Add butter and vanilla to syrup blending well, micro- wave on high 1 to 2 minutes more. Peanuts will be lightly brown and syrup very hot. 4. Add baking soda and gently stir until light and foamy. 5. Pour mixture onto lightly greased cookie sheet, or unbuttoned no stick coated cookie sheet. Let cool ½ to 1 hour. When cool, break into small pieces and store in air tight container
