ingredients 1/2 cup flour 1/2 cup cornmeal 2 tablespoons sugar 1/4 teaspoon salt 2 teaspoon baking powder 1 egg well beaten 1/2 cup of milk 2 tbsp vegetable oil

directions 1. Preheat oven to 425 degrees and grease bottoms of muffin tins. Sift flour (if not pre-sifted) and measure. 2. Sift together flour, cornmeal, sugar, salt, and baking soda. 3. Blend beaten egg, milk, and oil in a small mixing bowl. 4. Make a well in the middle of the dry ingredients and pour liquid ingredients into well. 5. Quickly stir only until ingredients are moistened. Batter is lumpy. 6. Place into muffin tins and bake for about 15 minutes.
