Moroccan Chicken Salad

Ingredients : 2 whole chicken breasts 1 large red bell pepper, cored, seeded and thinly sliced 1 red onion peeled and thinly sliced 1 tbsp. cumin seeds, toasted and ground 1/2 tsp. cayenne 1 tsp. paprika 2 tbsps. garlic, finely minced

1/4 cup fresh lemon juice 1/4 cup red wine vinegar 1 cup chicken broth 2 tbsps. olive oil 1/2 cup fresh cilantro, finely minced 1/2 cup fresh Italian parsley, finely minced Salt and pepper to taste 1/4 cup Niçoise OR Kalamata olives

Instructions: Roast, broil or poach the chicken. When it is cool, bone and skin it, and shred the meat into bite-sized pieces. In a large bowl, combine the chicken pepper, and onion. Refrigerate covered. Combine the cumin, cayenne, paprika and garlic. Whisk in the lemon juice, vinegar chicken broth and olive oil. Stir in the cilantro, parsley, and salt and pepper to taste. Remove the chicken from the refrigerator; pour the vinaigrette over and toss. Garnish with olives.
