Greek Feta Salad
Ingredients: 4 blanched grape leaves, drained 3 tomatoes thinly sliced 1/2 cucumber peeled and thinly sliced 1 small red onion, thinly sliced 4 oz. feta cheese, cut into cubes 32 black olives without pits
Instructions: Arrange the grape leaves on four plates. Top with tomatoes, cucumber, and onion, then feta and olives.
Lemon Oregano Dressing: 3 tbsps. olive oil 1 tbsp. lemon juice 1/2 tsp. dried oregano Salt and pepper to taste
To make the dressing, put the oil, lemon juice dried oregano in a screw-top jar, screw on the lid and shake well. Drizzle the dressing over the salad and season with salt and pepper, then serve immediately.

Ingredients: 1 cup bulgur wheat
1 small onion, chopped 1 large tomato, chopped 1 cup parsley, chopped 1/3 cup pine nuts, toasted 1/3 cup walnuts OR almonds 1/2 lemon juiced 1/3 cup olive oil Salt and pepper to taste
Instructions: Soak the bulgur wheat in a cup of water; cook according to package Instructions and let it sit until water is absorbed. Mix the oil & lemon juice together. Mix all remaining ingredients with the boiled wheat, including the oil and lemon mixture. Salt and pepper to taste. Refrigerate for before serving.
