Monastery Coleslaw

Ingredients: 10 cups shredded cabbage 1/2 cup diced red pepper 1/2 cup diced green pepper (optional) 1/4-1/2 cup shredded or diced carrot (optional) 1/2 cup diced onion, or more to taste 3/8 cup red wine vinegar 1/4 cup white vinegar 1/2 cup oil 3/4 cup sugar

1-2 tsp. salt, or to taste 3/4 tsp. black pepper

Instructions: Combine in your largest bowl or container, the cabbage, peppers, carrot, and onions. In a smaller bowl whisk together the vinegar, oil, sugar and salt and pepper, to taste. Pour the oil and vinegar mixture over the cabbage mixture to stir and coat vegetables evenly. Chill and serve. The Monastery, of course, makes and serves large amounts of this slaw, but recipe may be doubled or halved to suit your needs.

Dennis’s Homemade Pimento Cheese Ingredients:

2 cups of grated Velveeta cheese 2 cups of shredded cheddar cheese

4 ounces of cream cheese 1 jar of Pimentos, drained 1 cup of mayonnaise 1 teaspoon of vinegar

½ teaspoon of sugar ½ teaspoon of paprika ¼ cup of milk

Combine all ingredients together.
