Mushroom Soup

Ingredients: 1 dozen medium sized mushrooms, well washed and sliced 1 large onion, chopped 3 large cloves garlic, minced 1/4 cup oil Salt and pepper, to taste

6-8 cups water OR vegetable stock Flour, as needed for thickening soup

Instructions: Combine in a soup kettle, mushrooms, onions, garlic, oil, salt and pepper and water. Bring to boil, turn to simmer and cook until onion is tender. Thicken with mixture of flour and water. Chris uses about ½ to ¾ cup flour in ½ cup water per about 2 quarts soup. She mixes it together in a small jar with a lid, shaking it well or one can mix it with a wire whisk; beat it briskly. Add flour mixture very slowly to soup, stirring it constantly.

If you wish your soup to be thicker or thinner, use more or less flour.

Chris remembers her mother making this soup when she was a child. Recipes were passed down by memory from mother to daughter. Little was written down. We are grateful to our mothers and sisters who have diligently shared and taught us. No matter what your ethnic background might be this sharing and passing on is the foundation for tradition and family.
