Meatball Soup (Ciorba de Perisoare)

Ingredients: 2 potatoes Finely diced 2 tomatoes Finely diced 1-1/2 medium onions finely diced 3 stalks celery finely diced 1 green bell pepper finely diced

2 medium carrots, grated Salt and pepper, to taste 10-12 cups water, or broth of your choosing 1 lb. ground beef (chicken or pork may also be used) 1 egg 2 tbsps. flour Salt and pepper, to taste or other spices 1 cup tomato sauce 1 lemon juiced 2 tbsps. olive oil Fresh parsley chopped, for serving

Instructions: Dice the potatoes, tomatoes, onions, celery, bell pepper in small pieces and grate the carrots. Place in large pot with 10-12 cups water/broth, bring to boil and cook covered over medium heat 10 minutes. Add salt and pepper to taste. While cooking, prepare meatballs. Combine ground beef, egg, flour, and salt and pepper to taste (as well as any additional preferred spices) and shape into balls the size of a walnut or smaller. Add meatballs to simmering broth. They will rise when cooked. They are ready in 20 minutes depending on size. While they are cooking make tomato mixture. Whisk together the tomato sauce, juice of lemon, olive oil and add to the broth when the meatballs have nearly finished cooking. Cook 10 more minutes over medium heat, top each serving with fresh parsley.
