Whole-Wheat Maple Cinnamon Rolls Ingredients:

1 cup unsweetened almond milk 3 tbsps. plus 5 tbsps. coconut oil 1 packet quick-rising yeast 1/4 cup plus 1 tbsp. maple syrup 1/4 tsp. salt 3 cups plus more for dusting whole-wheat pastry flour 1-1/2 tsps. ground cinnamon

Instructions: In a small saucepan, add the almond milk and 3 tablespoons of the coconut oil and heat over medium heat until the mixture is warm. Between 105 and 115 degrees and the coconut oil is melted. Pour into a large mixing bowl. If the mixture is hot to the touch, let it cool to warm. Sprinkle the yeast and 1 tablespoon of the maple syrup over the top of the almond milk mixture and stir gently to combine. Set aside for about 10 minutes until foamy. Stir in the salt. Add the flour about 1/2 cup at a time and stir to combine after each addition. Transfer the dough to a floured surface and knead for about 2 minutes until it forms a smooth ball. Clean the mixing bowl and coat it lightly with coconut oil. Add the dough ball and turn to coat. Cover the bowl with a clean dish towel and set aside to rise until doubled about 1 hour. In a small saucepan., melt the remaining 5 tablespoons of coconut oil over medium heat. Use about 2 tablespoons of the oils to coat the bottom and sides of a square 8 inch baking pan. Turn the dough out onto a lightly floured work surface and roll out into a rectangle about 8 by 14 inches. Brush the top with the 3 tablespoons of melted coconut oil. Drizzle with the remaining 1/4 cup of maple syrup and sprinkle with cinnamon. Starting with one of the log sides roll the rectangle into a cylinder. With the seam side down cut the cylinder with a serrated knife into 1-1/2 to 2 inch rounds. Preheat the oven to 350 degrees. Place the rounds next to each other in the prepared baking pan, cover, and let rise until doubled, about 30 min. Bake the rolls for 25 to 30 min, until they turn golden brown. Remove from the oven and let cool for five minutes. Pre-heat: 350 degrees and bake 25 to 30 minutes. Makes: 10 rolls. Serve immediately. Let any extra rolls come to room temperature before storing in an airtight container.
