Fifi’s “Tiropitakia” (Cheese Triangles)

Ingredients: 2 sticks of butter, softened 1 (8 oz.) package cream cheese,

1 egg, beaten 3 cups flour feta cheese

softened

Instructions: Knead first 3 ingredients together. Make into small balls, size of walnuts. Flatten outtoaboutsizeofyourpalm. Placesmallpieceof fetacheese, sizeofahazelnut) ondough center and folddoughover cheese, sealwell, pressingedgewith a fork. Other shapes canbemade if desired. Brush topwithbeatenegg. Bakeongreased cookie sheet at 350 degrees for about 30 min.

Fifi, Greece/Turkey

“Fifi came from Constantinople, Turkey in the early 1900s with her husband Nick. They settled in the booming coalfields of McDowell County, WV. They lived in Welch and from about 1950 bought and ran the Sterling Drive Inn until George Mitros took it over. Fifi was an excellent cook. And Nick was an excellent dancer of Greek folk dances. Fifi’s recipe is an easy recipe without the traditional phyllo dough. — Virginia Chryssikos

Randy’s Famous Cheeseball

Ingredients: 2 (8 oz) packages cream cheese 8 strips bacon cooked and crumbled 1 small jar Jalapeño peppers, chopped (depends on how spicy you would like the recipe to be) 4-6 green onions chopped

1/4 cup honey

12 oz. shredded sharp cheddar cheese Cracker crumbs OR Cornflake crumbs

Instructions: Cook bacon, crumble and set aside. Combine the remaining ingredients, add bacon and mix by hand. Put mixture in the refrigerator to chill overnight or 8 hours. Form cheeseball into 1 large cheeseball, or 2 smaller cheeseballs. Roll cheeseball in crumbmixture and servewith your favorite crackers. Makes: 1 large, or 2 small cheese balls.
