Korkoti (Koliva) Made when remembering the departed
Ingredients: 1 lb. white wheat berries 2-3 cups raisins 4 cups walnuts, chopped thinly 2 cups, or to taste, sugar Natural honey, to taste 1 tsp. salt
Instructions: Pour package of wheat berries onto a cookie sheet and go through them carefully to make sure there are no stones, or other seeds in them. Wash them thoroughly 2-3 times. Then add 8 cups of water (4 pts, 2 qt.) or more and put on the stovetop at a low heat to boil for 4 hours. When done the berries should be swollen and half open. They should be soft when tasted. After the wheat berries are well boiled, make sure to drain all the excess water. Add thinly chopped walnuts, add sugar, salt and honey to taste. It should be sweet, but not too sweet.
You can add 3-4 tbsp of thinly grinded walnuts for a richer texture.
