Grandma Semonco’s Yum-Yums

Ingredients: 1 cup Crisco 1 box brown sugar 4 eggs 2 tsps. cinnamon 2 tsps. cloves 1/2 tsp. nutmeg 2 cups buttermilk 2 tsps. baking soda

2 cups raisins (scalded) 3 cups all-purpose flour

Instructions: Cream sugar and Crisco, add eggs one at a time. Mix dry ingredients together and add to the above mixture, stir until moistened. Stir soda into buttermilk and add ½ of this mixture to ½ of the flour mixture. Continue adding alternately until all ingredients and mixed and fold in the scalded raisins. Preheat oven to 350 degrees F. Grease and flour a muffin pan, or, use paper liners. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

Banana Nut Maple “Ice Cream”

Ingredients: 4 ripe bananas broken into chunks and frozen

3 tbsps. maple syrup 1 tsps. vanilla extract 1/3 cup walnut pieces

Never need to throw out over ripe bananas again. Just peel them, chop them and freeze and you will always be ready to make fasting “ice cream.” This recipe is a template, can alternate with other flavors such as peanut butter, chocolate, etc. Go crazy! Instructions: In the bowl of a food processor (or blender), add the bananas, maple syrup and vanilla and process until smooth and creamy, scraping down the sides as necessary. Transfer the mixture to a bowl and stir in the walnuts.
