Ice Box Cake

Ingredients: 3/4 cups water 1 lemon rind and juice 1 can evaporated milk (have in freezer) 1 (5 oz) package Jell-O (any flavor) 1/2 cup sugar 1 package cookies; Any flavor preferably plain like vanilla wafers but any kind is okay. Instructions: Boil water. Mix sugar, Jell-O, lemon juice and rind. Add this mixture to the water. Beat the milk until rich and foamy. Add to the mixture. Grease loaf pan with butter and add any kind of crushed cookies to the bottom of the pan. Pour mixture into pan and top with leftover cookie crumbs. Refrigerate until it “jells” and can be cut into squares. My mother used to make Ice Box Cake at least a couple of times a month in the summer. I always loved the way she made it! Sometimes it was pink (strawberry Jell-O). Sometimes it was green (lime Jell-O). But whatever the color was, it was a special, perfect, light summertime dessert. Mother would sometimes add crushed pineapple , depending on the flavor of Jell-O she chose. She loved to please with this and other tasty desserts. The latter was her forte.” - Virginia Chryssikos

Halvah

Ingredients: 2 cups oil

2 tbsps. baking powder

1/2 cup sweet white wine 1/2 cup orange juice 1 cup white wheat flour

1 tsp. baking soda

1 tbsp. sugar

Nuts (optional)

4 cups white flour

Syrup: 3 cups sugar 2 cups water

Instructions: Preheat oven to 350 degrees. Using your hands, mix all ingredients in a 9X13 inch pan. Pat smoothly in place. Score for cutting before baking. Bake for 1 hour. After baking, pour syrup over. Cool before separating pieces on score lines. Syrup: Boil together 10 minutes over medium heat; 3 cups sugar and 2 cups water.
