Texas Coconut Cake

Ingredients: 1 cup Crisco 2 cups sugar 5 eggs

2 cups all-purpose flour 1-1/2 tsps. baking powder 1/2 tsp. salt 1 cup milk 1 tsp. coconut flavoring 1 cup coconut

Instructions: Grease and flour tube cake pan. Mix 1 cup of Crisco and 2 cups of sugar in a mixer and mix well. Beat in 5 eggs, 1 at a time. In a separate bowl, mix 2 cups of sifted all-purpose flour, 1-1/2 teaspoons of baking powder, and 1/2 teaspoon of salt. Add this to the creamed mixture with 1 cup of milk. Add 1 teaspoon of coconut flavoring and 1 cup of coconut to this mixture and bake in prepared pan for 1 hour at 350 degrees. Frosting – 1/2 cup of sugar, 3/4 cup of water, 1/2 teaspoon of coconut flavoring. Bring to boil and boil for only 1 minute. Remove from the heat. Invert the cake onto a plate and spoon the mixture over the cake while the cake is warm and the mixture is warm. Ingredients: 2-1/2 cups hot applesauce 1 cup chopped nuts 4 tsps. baking soda 1 box floured raisins 1 cup butter 1 tsp. nutmeg AND cinnamon 2 cups sugar 1/2 tsp. cloves 4 cups flour 1 tsp. vanilla Instructions Grease and flour a large tube-cake pan. Preheat oven to 350 degrees. In the hot applesauce stir in baking soda; set aside to cool. Cream sugar and butter very well and add dry ingredients alternating with cooled applesauce.
