Quick and Easy Salmon Patties
Ingredients: 1 (15 oz.) can pink or your favorite variety of salmon 1 egg slightly beaten 1/3 cup onion, minced 1/2 cup flour 1-1/2 tsp. baking powder 2-4 tbsps. frying oil, of your favorite variety 1/4 cup (optional) green or red bell pepper, finely chopped
Instructions: Drain salmon and break apart, reserving 3 tbsps. juice for patties. (Optional: fork through salmon and remove any bones or skin). Pour juice in a small glass, add baking powdered and whisk well: it will foam up so don’t use too small a glass. In a medium bowl, add the crumbled salmon, egg, onions and mix well. Add the flour, the salmon will become sticky, add the juice/baking powder mixture and any optional ingredients and blend thoroughly. Shape into 6 patties and fry in oil on medium heat, turning once until golden brown.
Crispy outside, tender inside, and truly easy to make.

Shrimp Pilaf
Ingredients: 2-1/4 lbs. shrimp 1 medium onion, chopped 2 fresh green onions, chopped 1/2 cup parsley, chopped 1/2 cup canned tomato sauce OR 1-2 ripened tomatoes, peeled and crushed 1 or 1-1/2 cups long grain white rice 1/2 cup oil Water (OR shrimp broth if home cooked) Salt and pepper, to taste Dash Curry powder Instructions: Sauté onions in oil till tender. Add shrimp, parsley, salt, pepper and curry. Simmer for 1-2 minutes. Add tomato sauce and enough water or broth to make pilaf. (1 part rice to 3 parts liquid). Boil for a few minutes then add rice. Cover and simmer till the rice is cooked. Serve warm.
