Mock Mash Potatoes Using Cauliflower
Ingredients: 1 medium head cauliflower 4 cloves fresh garlic 2 tsp olive oil 1 to 2 tbsp rosemary 2 tbsp unsalted butter 3 to 4 tbsp sour cream 1 C Parmesan cheese Kosher salt and Pepper to taste
Instructions: Place chopped cauliflower pieces into a microwave streamer bowl. Add a tablespoon of water to create steam. Depending upon the microwave, cook cauliflower 10 to 15 minutes. Cook until cauliflower is tender. Roast garlic in olive oil in a small saucepan until soft and brown. Don’t let get to brown because it will have a burnt taste to finish product. When almost soft add rosemary to garlic. Place tender cauliflower into a food processor, add unsalted butter, sour cream, parmesan cheese, roasted garlic, rosemary, salt, and pepper. Blend until smooth. Serve warm.

Emma’s Easy Almost Cabbage Rolls Ingredients: 1 medium head cabbage, cut in thin slices or shredded 1 lb. ground pork 1 lb. ground beef, or chuck
1-1/2 cups. cooked rice 1 onion chopped fine 2 eggs beaten 1/2 tsp. salt 1/4 tsp. pepper
Instructions: Cut in thin slices or shred 1 medium cabbage. Combine, mix well and make into small meatballs; ground pork, ground beef, rice, onion, eggs, salt and pepper. Layer cabbage and meatballs in greased 9x13 pan or a large pan with cover on stovetop. Mix together 1(8oz) can tomato sauce, 1(10 ¾ ) oz can tomato soup, and one soup can of water. Pour evenly over meatballs and cabbage. Cook covered 1 hour, make a roux of 2TBS olive oil and 2TBS flour and brown slightly. Pour over meatballs and cabbage. Cook covered another ½ hour or until all is tender. Same great flavor and oh so easy!
