Dad’s Fried Chicken – OMG!!!
Ingredients: Everything in this recipe has to be adapted to the amount of chicken you are planning to fry.
Chicken (pieces of your choice) lightly salt and peppered 1 cup Flour 1 Egg and 1 cup of Milk well blended Corn Flake Crumbs Vegetable Oil for frying Seasoning Salt and Pepper
Instructions: Be sure the chicken is rinsed, patted dry and at room temperature before coating the chicken. Begin coating chicken (tender’s or whole pieces) by coating in flour first. Be sure to coat very well in each stage of dipping process. Coat chicken in flour firsts, dip into egg and milk mixture, and finally, the cornflake crumbs. I get three large bowls where I can shake and dip easily while doing this. If you cannot find cornflake crumbs, you can make them yourself by using cornflakes and putting them in your food processor. Or, you can always put the cornflakes between two pieces of wax paper and roll them with a rolling pin the way dad did. Again, the amount of oil used for frying depends on the amount of chicken you are frying. I use a deep fry pan and have the oil half-way up the pan. Do not crowd the chicken when frying and do not place in oil until the oil is 350 degrees. Fry until done and sprinkle with cracked pepper and seasoning salt. Note: I would go to competition with this recipe! Dad’s chicken is one of the first recipes that Yana, Andrew, Anna, and I remember growing up. We always had chicken on a regular basis at home, but the best memory we have is when dad got up before daybreak and fried chicken before we went on vacation. No drive-thru’ s, no stopping at convenience stores for snacks, and no junk food! Dad packed chicken in a shoebox, yes, a shoebox lined with wax paper, and we started asking for the chicken before we left Elkhorn, but mom and dad made us wait until we crossed over (no tunnel) East River Mountain. All of our children eat this chicken and pack it in a shoebox when going on vacation!
