Mountain Man Potato Cakes, (Goralski Placek Kartoflany)
Ingredients: 3 cups cold mashed potatoes, no milk or butter 1-1/2 cups flour 2 eggs lightly beaten 1-1/2 tsps. baking powder 1/2 tsp salt Good pinch of black pepper
Optional: Ingredients can be a 1/2 cup of any of the following or any combination of these: not to exceed 1 cup browned chopped onion Drained sauerkraut Cooked cabbage Grated apple Grated cheese Instructions: Preheat oven to 375 degrees. In a large mixing bowl combine ingredients and mix well. Add any optional ingredients as desired and blend in well. Pat out on well-greased cookie sheet or pizza pan to about ½ inch thick. Bake 35-45 minutes until lightly browned and dry on top. (If topping with cheese, add it last few minutes of baking time.) Cut in serving size pieces and enjoy. These cakes keep well and reheat nicely in the microwave. Note: Easy to make and healthy, as these are not baked or fried. Packed for meals by the mountain shepherds in Poland’s southern Tatra Mountains in the Carpathian Mountain range.
