O nion, Allium cepa , the second most-produced vegetable in the world, originated in the regions of Afghanistan, Iran, and Pakistan. It is the most widely grown vegetable crop, from the tropics to sub-arctic regions. Onion is consumed both dried and green and the most common are three varieties including yellow, red, and white onions. Several cultivars are grown around the globe including shallots and spring onion. Sulfur derivatives in onions are responsible for the strong smell and taste of onions. Onion crop needs fertile, well-drained soils, and long daylight days to grow well. China, India, and the USA are the largest producers of onion.
